How Long Does It Take?

Most sets of kitchen knives take about 20 to 30 minutes depending on condition. Smaller items are usually quicker.

This is live sharpening, so you can walk the show, check out vendors, and come back to tools that actually cut the way they should.

Why Proper Edge Geometry Matters

Unlike quick hardware store grinding, your edges are corrected based on the steel and intended use.

Kitchen knives are typically set at 20 degrees per side

Japanese style blades closer to 15

Pocket knives at 25 degrees per side for durability

Edge angle matters. A properly set edge lasts longer, cuts cleaner, and performs the way the tool was meant to perform.
